Rich Vegetable Salad with Spinach

Rich vegan salad of garden vegetables, lettuce, pumpkin seeds and spinach leaves - healthy, nutritious, easy and quick

Cucumber, 1 medium unit
with peel
Tomato, 1 medium unit
Red pepper, 1 small unit
Yellow pepper, 1 small unit
Spinach, 1 handful
Iceberg lettuce, 1/4 average size
Zucchini, 1 small unit
Radish, 1 medium unit
Carrot, 1 medium unit
Lemon juice, 1/2 unit
freshly squeezed
Olive oil, 2 tablespoons
extra virgin
Peeled pumpkin seeds, 2 tablespoons


1. Cut the cucumber, tomato and peppers into cubes, tear the spinach leaves by hand into pieces, chop the lettuce, grate the zucchini and radish, and cut the carrot into semicircles.
2. Mix all the vegetables gently in a bowl.
3. Season with lemon juice and olive oil, sprinkle with the pumpkin seeds and serve.

The spices in the recipe are according to personal taste (you can add salt and black pepper).
