Bulgur Wheat Salad with Herbs

Vegan bulgur salad with herbs, pomegranate seeds, walnuts, apple and cranberries - a refreshing salad that contains all the best ingredients

Dry bulgur, 1/2 cup
medium size
Parsley, 1 bunch
chopped without a stem
Coriander, 1 bunch
chopped without a stem
Mint, 1 handful
finely chopped, leaves only
Pomegranate seeds, 1 cup
Walnuts, 20 units
Apple with peel, 1 medium unit
Granny Smith, cut into cubes
Cranberries without added sugar, 2 tablespoons
Lemon without peel, 1 medium unit
cut into cubes
Lemon juice, 2 units
freshly squeezed
Salt, 1 flat teaspoon
to taste
Black pepper, 1/4 flat teaspoon
to taste
Olive oil, 3-4 tablespoons


1. Soak the bulgur for 20 minutes in boiling water and strain.
2. In a bowl, mix the parsley, coriander, mint, pomegranate seeds, walnuts, apple, cranberries and lemon.
3. Season right before serving with lemon juice, salt, black pepper and olive oil.
4. Mix the bulgur salad well and serve.
