Sweet Potato Salad in Sweet Chili Sauce and Candied Pecans

Delicious and easy baked vegan sweet potato salad with sweet chili sauce, soy sauce, green onion and broken candied pecans

Ingredients

Sweet potato, 2 medium units
peeled and cut into 2 cm cubes
Canola oil, 5 tablespoons
Garlic, 3 cloves
crushed
Sweet chili sauce, 6 tablespoons
Soy sauce, 2 tablespoons
Candied pecans, 1/4 cup
broken
Green onion, 1/4 cup
chopped, or chives
Basil, 3 tablespoons
chopped, or parsley
Hot green pepper, 1/2 medium unit
optional - cut into small cubes

Preparation

1. Mix the sweet potato cubes with the oil, and bake in the oven at 356°F (180°C) for about 20 minutes until the sweet potatoes are golden and soft.
2. Remove the sweet potatoes from the oven and set aside to cool (important tip: let the sweet potatoes cool because if you mix while it is still hot - it will turn into a mash, if you cook the vegetable it will give the salad an old taste and appearance).
3. Meanwhile, mix well (or even shake) the rest of the salad ingredients, and then mix gently with the sweet potatoes.
4. You have a delicious sweet potato salad that is easy to make!
