Zucchini with Garlic, Lemon and Olive Oil

Zucchini salad for vegans - delicious, refreshing and easy to make with touches of garlic, lemon and olive oil

Zucchini, 8 medium units
4 green and 4 yellow
Olive oil, 2 tablespoons
Garlic, 4 cloves
Lemon with peel, 4 slices, cut into 4 pieces
Lemon juice, 1 tablespoon
Salt, 1/2 flat teaspoon
Black pepper, 1/2 flat teaspoon
Parsley, 2 tablespoons


1. Cut the edges of the zucchini and wash well (do not peel).
2. Cut the zucchini into cubes of the desired size, heat the olive oil in a pan, add the zucchini and stir-fry for a few minutes.
3. Add the rest of the ingredients, mix and add more spices to taste.
