Pita Bread with Za'atar and Cherry Tomatoes

Ingredients

The dough
White flour, 500 g
Dry yeast, 1 tablespoon
Sugar, 1 flat tablespoon
Salt, 1 flat tablespoon
Canola oil, 1/3 cup
Water, 1¼ cups
lukewarm
The toppings
Olive oil, 4 teaspoons
0.5 teaspoon per pita (as needed)
Cherry tomato, 10 units
sliced
Za'atar, 1 flat tablespoon
to taste
Sesame seeds, 1 tablespoon
to taste

Preparation

1. Knead all the dough ingredients using the hands until the dough is soft, let rise for about an hour or until it doubles in size, knead the dough again and let it rest again for about 20 minutes.
2. Divide the dough into 8 balls and from each ball form (flatten) a pita of the desired size.
3. Place the pitas on baking paper in a baking tray, spray each pita with a little oil (preferably olive oil of course) and sprinkle on half of the amount sesame seeds and tomato slices and on the other half za'atar and sesame seeds. You can also sprinkle coarse salt to taste.
4. Bake the pitas in a preheated oven at 356°F (180°C) for about 25 minutes or until golden.
