Summer Vegetables Salad with Sprouted Lentils

Vegetables salad with green leaves, lettuce and radishes with the addition of sprouted black lentils that give an even healthier twist

Ingredients

Green leaves, 1 handful
Arabian lettuce, 3 medium leaves
tear by hand
Cucumber, 1 medium unit
cut into cubes with the peel
Tomato, 1 medium unit
cut into cubes
Yellow pepper, 1 medium unit
cut into small cubes
Red pepper, 1 medium unit
cut into small cubes
Radish, 4 medium units
cut into thin slices
Sprouted black lentils, 3 tablespoons
Natural and peeled pine nuts, 1 tablespoon
Olive oil, 2 tablespoons
extra virgin
Lemon juice, 1/2 unit
freshly squeezed
Balsamic vinegar, 1 tablespoon

Preparation

1. Place all the vegetables, sprouted lentils and pine nuts in a bowl.
2. Mix well the olive oil, lemon juice and balsamic vinegar (the sauce).
3. Pour the sauce over the salad and mix gently everything together.
4. Serve immediately.
