Rich Vegan Salad with Tahini Sauce

Rich and delicious vegan vegetable and leaf salad with tahini sauce - a nutritious and very quick dinner

Arabian lettuce, 4 medium leaf
washed and cut by hand
Chinese sprouts, 1 handful
Tomato, 1 large unit
cut into cubes
Cucumber with peel, 1 large unit
cut into cubes
Carrot, 1 large unit
peeled, cut lengthwise with a vegetable peeler
Sweet corn, 3 tablespoons
canned, washed and filtered
Peeled natural sunflower seeds, 1 tablespoon
Almonds, 15 units
natural and soaked in water
Whole arugula leaves, about 30 leaves
Sunflower sprouts, 1 handful
Lemon juice, 1/2 unit
freshly squeezed
Balsamic vinegar from Modena, 1 tablespoon
Raw tahini, 1/4 cup
with chia seeds
Lemon juice, 1/2 unit
freshly squeezed
Water, 1/2 cup


1. Gently mix all the salad ingredients in a large bowl.
2. Prepare the tahini: mix the raw tahini with the lemon juice and about 0.5 cup lukewarm water until you get a tahini liquid texture.
3. Place the salad in serving bowls and drizzle from the prepared tahini about 3 tablespoons over each dish.
