Simple Tabbouleh Salad

Simple and easy vegan tabbouleh salad made from soaked bulgur with herbs, red onion, lemon juice and olive oil

Ingredients

Dry bulgur, 1 cup
Parsley, 1 handful
finely chopped
Coriander, 1 handful
finely chopped
Red onion, 1 medium unit
finely chopped
Lemon juice, 1/2 unit
freshly squeezed, to taste
Coarse salt, a pinch
to taste
Black pepper, a pinch
to taste
Olive oil, 2 tablespoons
to taste
Water, as needed

Preparation

1. In a large bowl, rinse the bulgur several times, strain and add 2 cups of boiling water.
2. Meanwhile, chop as finely as possible the parsley, coriander and red onion.
3. After the bulgur soaks up the water and doubles in volume (a process that will not take more than 30 minutes) - squeeze out the hot water, rinse lightly with cold water, strain and add to the bowl with the parsley, coriander and onion.
4. Season with fresh lemon juice, coarse salt, black pepper and olive oil. You have a simple Tabbouleh salad.

Tip
You can add mint, tomato or any vegetable you like. You can also add cranberries/nuts (pecans, walnuts, cashews).
