Cucumber and Carrot Salad in Tahini Sauce

The vegetables
Cucumber, 3 medium units
cut into thin strips (without peel)
Carrot, 3 medium units
cut into sticks with mandolin slicer (without peel)
Celery, 2 stalks
finely chopped (with leaves)
The sauce
Raw tahini, 3 tablespoons
Cold water, 1/2 cup
Lemon juice, 1 unit
freshly squeezed
Salt, 1/4 flat teaspoon
Black pepper, 1/4 flat teaspoon


1. Mix all the vegetables, transfer to a closed box and place in the refrigerator.
2. Stir all the sauce ingredients (add the water according to the desired thickness), transfer to a closed jar and set aside.
3. Just next to serving pour the sauce over the vegetables in a bowl and serve.
