Ingredients
Quinoa, 1/2 cup
Buckwheat, 1/2 cup
Mung bean, 1/2 cup
Wheat, 1/2 cup
Sweet potato, 1 medium unit
Canola oil, 1 tablespoon
Cranberry, 1/2 cup
Walnut, 1/2 cup
Red onion, 1 medium unit
Coriander, 2 teaspoons
Mint, 2 teaspoons
Basil, 2 teaspoons
Za’atar, 1 flat teaspoon
Olive oil, 4 tablespoons
Lemon juice, 4 tablespoons
Salt, 1/2 flat teaspoon
Black pepper, 1/2 flat teaspoon
Preparation
1. Cook the quinoa, buckwheat, צומע bean and wheat (each separately) until softened (check the softness - each may have a different time).
2. Cut the sweet potato into cubes and fry in a little oil.
3. Mix all the ingredients together in a bowl and set aside to absorb flavors. A great vegan salad is obtained.
