Cabbage Salad with Cashews, Dill and Dried Pomegranate

Vegan cabbage strips salad combined with wonderful flavors of natural cashews, chopped dill and dried pomegranate seeds

Ingredients

The Main Salad Ingredients
Cabbage, 1 small unit
cut into very thin strips
Dried pomegranate seeds, 50 g
Cashew, 100 g
natural (not roasted)
Dill, 1 bunch
finely chopped
The Sauce
Olive oil, 1/4 cup
Sugar, 1 flat tablespoon
5% vinegar, 2 tablespoons
Lemon juice, 1 tablespoon
freshly squeezed
Salt, 1/2 flat teaspoon
Black pepper, 1/4 flat teaspoon

Preparation

1. Mix the cabbage with the dried pomegranate seeds, cashews and chopped dill.
2. Refrigerate for about 1 hour (can be prepared in advance).
3. Mix the sauce ingredients in a closed jar and keep in the refrigerator for about 1 hour.
4. Just before serving pour the sauce over the salad, mix well and serve.
