Stir-Fried Vegetables with Green Lentil

Delicious vegan addition that can also be a main course - onion, mushrooms, carrot and broccoli stir-fried with green and healthy lentils

Ingredients

Lentil, 2 cups
green, soaked and strained
Olive oil, 3 tablespoons
extra virgin
Onion, 1 large unit
chopped into cubes
Mushroom, 200 g
champignon, cut into cubes
Carrot, 1 large unit
peeled, cut into cubes
Broccoli, 1 medium unit
fresh, cut into cubes (including the stems)
Sea salt, 1/2 flat teaspoon
Curry powder, 1/4 flat teaspoon
Cumin, 1/4 flat teaspoon
Dry chili, 1/2 teaspoon

Preparation

1. Cook the green lentils (soaked in plenty of water for about two hours before and strained) in a pot with plenty of water for about 20 minutes until softened and strain.
2. In a large pan with a lid, fry the onion in olive oil for about 5 minutes.
3. Add the mushrooms, carrot and broccoli to the pan and mix. Fry for another 5 minutes.
4. Season, add the cooked green lentils to the pan, mix, cover with a lid and cook for another 5 minutes on low heat. Stir lightly and serve hot!

The nutritional value does not include the dry chili. The spices in the recipe are according to personal taste. The preparation method also includes frying.
