Baked Cauliflower and Butternut Squash

The wonderful taste of cauliflower with the soft texture of the butternut squash create a wonderful and nutritious addition that is fun to eat!

Ingredients

Cauliflower, 1 large unit
washed
Butternut squash, 1 medium unit
peeled and cleaned
Olive oil, 3 tablespoons (1 tablespoon + 2 tablespoons)
extra virgin
Dried thyme, 1 flat tablespoon
Sea salt, 1 flat tablespoon

Preparation

1.Cut the cauliflower into flowers and cut the butternut squash into thick half slices.
2. Line the oven tray with parchment paper and grease with a tablespoon of olive oil.
3. Arrange the cauliflower flowers and sliced butternut squash in the tray.
4. Brush 2 tablespoons of olive oil on the vegetables.
5. Sprinkle the sea salt and dried thyme over the vegetables.
6. Bake in the oven at about 400°F (200°C) turbo for about 50 minutes or until the vegetables are lightly browned.
7. Remove the tray to a slight cooling and serve hot.
