Ingredients
Pea, 1 cup
Onion, 1 large unit
Garlic, 2 cloves
Zucchini, 1 medium unit
Carrot, 1 medium unit
Celery, 1 stalk
Parsley, 2 tablespoons
Water, 1 cup
Gluten free cornflakes, 60 g
Buckwheat flour, 1/2 cup
Lupine flour, 1/2 cup
Olive oil, 2 tablespoons
Cumin, 1/2 flat teaspoon
Sweet paprika, 1/2 flat teaspoon
Ground nutmeg, 1/2 teaspoon
Salt, 1/2 flat teaspoon
Black pepper, 1/2 flat teaspoon
Olive oil, 2 tablespoons
Preparation
1. Grind all the ingredients (except the flours, olive oil and spices) in a blender or food processor.
2. Transfer to a bowl and mix manually with the flours, olive oil and spices. You can taste and fix seasoning.
3. Preheat the oven to 356°F (180°C) turbo.
4. Make latkes with the palms of your hands and place on a baking tray lined with baking paper.
5. brush each unit with a little olive oil using a silicone brush.
6. Bake in the oven for about 30-45 minutes until the latkes are slightly browned.
7. Remove from the oven to cool and serve.
8. You have delicious and healthy vegan pea latkes!

The preparation method also includes grinding. The nutritional value does not include the lupine flour. You can also fry the pea latkes in a little olive oil (see third picture). If frying use 4 tablespoons of olive oil in the recipe for frying.
