Gluten Free Vegan Pea Latkes

Oven baked dry pea latkes with vegetables and spices - especially suitable for vegans and gluten free

Ingredients

Pea, 1 cup
dry, soaked overnight and strained
Onion, 1 large unit
finely chopped
Garlic, 2 cloves
chopped
Zucchini, 1 medium unit
grated on a grater
Carrot, 1 medium unit
peeled, grated on a grater
Celery, 1 stalk
chopped (without the leaves)
Parsley, 2 tablespoons
chopped
Water, 1 cup
Gluten free cornflakes, 60 g
can use bread crumbs instead
Buckwheat flour, 1/2 cup
Lupine flour, 1/2 cup
Olive oil, 2 tablespoons
extra virgin
Cumin, 1/2 flat teaspoon
Sweet paprika, 1/2 flat teaspoon
Ground nutmeg, 1/2 teaspoon
Salt, 1/2 flat teaspoon
Black pepper, 1/2 flat teaspoon
ground
Olive oil, 2 tablespoons
extra virgin - for coating the latkes

Preparation

1. Grind all the ingredients (except the flours, olive oil and spices) in a blender or food processor.
2. Transfer to a bowl and mix manually with the flours, olive oil and spices. You can taste and fix seasoning.
3. Preheat the oven to 356°F (180°C) turbo.
4. Make latkes with the palms of your hands and place on a baking tray lined with baking paper.
5. brush each unit with a little olive oil using a silicone brush.
6. Bake in the oven for about 30-45 minutes until the latkes are slightly browned.
7. Remove from the oven to cool and serve.
8. You have delicious and healthy vegan pea latkes!

Equipment: blender or food processor, grater.

The preparation method also includes grinding. The nutritional value does not include the lupine flour. You can also fry the pea latkes in a little olive oil (see third picture). If frying use 4 tablespoons of olive oil in the recipe for frying.
