Basmati Rice with Vegetables and Pine Nuts

Ingredients

Basmati rice, 1 cup
soaked, washed and strained
Olive oil, 3 tablespoons
extra virgin
Mushroom, 200 g
cut small
Carrot, 1 medium unit
cut into small cubes
Zucchini, 1 medium unit
cut into small cubes
Pine nut, 2 tablespoons
natural
Sea salt, 1/2 flat teaspoon

Preparation

1. Soak the rice in a bowl for about an hour, rinse and strain.
2. Heat the olive oil in a wide pan, add the various vegetables and fry for about 5 minutes.
3. Add the strained rice and sea salt, fry for another minute and cover with boiling water.
4. Cover, bring to a boil again, lower the heat and cook for about 15 minutes.
5. Turn off the heat, wait another 5 minutes and transfer to serving plates.

The spices in the recipe are according to personal taste. The preparation method also includes frying.
