Homemade Garlic Confit

Easy homemade garlic confit with olive oil, rosemary, thyme and coarsely ground chili

Ingredients

Garlic, 4 heads
Olive oil, 1 cup
as needed
Rosemary, 2 stalks
Thyme, 2 stalks
Chili, a pinch
coarsely ground
Coarse salt, 1/4 flat teaspoon
Black pepper, 1/4 flat teaspoon
coarsely ground

Preparation

1. Peel the garlic cloves (keep them whole).
2. Put the garlic cloves in a baking pan, pour the olive oil until the garlic cloves are covered and add the rosemary, thyme and the coarsely ground chili. It is recommended to add coarse salt and coarsely ground black pepper according to personal taste.
3. Bake in the oven at 350°F (180°C) degrees for about 45 minutes, until softened.
4. Wait for it to cool and transfer to a glass jar along with all the olive oil.

The spices in the recipe are according to personal taste. I estimate it can stay in the fridge for at least a week and a half and more (because of the olive oil), but you probably will not be able to resist so much and finish the whole jar very quickly (: The working time includes the garlic cloves peeling.
