Slices of Vegetables in The Oven

Eggplant, 1 medium unit
elongated and narrow
Zucchini, 3 medium units
Tomato, 2 medium units
Red onion, 1 medium unit
Olive oil, 1 tablespoon
to grease the baking pan
Salt, 1 flat teaspoon
Black pepper, 1/4 flat teaspoon
Thyme, 3 leaves
Olive oil, 2 tablespoons
for sprinkling on the vegetables
Garlic, 6-7 cloves
with the peel


1. Rinse and slice all the vegetables with the peel - it is important to slice the vegetables in an equal size (about 2-3 cm thick).
2. Grease the baking pan with olive oil.
3. Arrange the eggplant and the zucchini on the baking pan (a slice each time).
4. Arrange the tomato slices and red onion in the middle of the baking pan.
5. Add salt and black pepper, sprinkle with fresh thyme leaves and drizzle with olive oil.
6. Sprinkle the whole garlic cloves over the vegetables and place in the oven for 50 minutes at 390°F (200°C).
