Baked Vegan Orange Lentil Patties

Oven-baked orange lentil patties with potato, onion and carrot that are especially suitable for vegans, vegetarians and those who are sensitive to gluten

Ingredients

Potato, 1 large unit
peeled
Orange lentil, 250 g
soaked in water for about 2 hours
Onion, 2 medium units
chopped
Olive oil, 3 tablespoons
extra virgin - for frying
Garlic, 1 clove
chopped
Carrot, 1 large unit
peeled and grated
Organic mung flour, 2 flat tablespoons
you can also use lentil/chickpea flour
Salt, 1/4 flat teaspoon
to taste
Black pepper, 1/4 flat teaspoon
coarsely ground - to taste
Olive oil, 3 tablespoons
to grease the pan and drizzle over

Preparation

1. Cook the potatoes in a pot of water for about 30 minutes until soft, strain and mash it to puree.
2. Cook the orange lentils in a pot with water for about 30 minutes until softened and strain.
3. Fry the onion in olive oil in a pan for about 10 minutes, add the clove of garlic and the grated carrot, and continue to fry for another 10 minutes while stirring.
4. Mix all the ingredients in a bowl, form patties to about 6 cm in diameter each and place on a lightly greased baking paper on a tray.
5. Drizzle a little olive oil over each patty and bake at 356°F (180°C) turbo for about 45 minutes or until browned.
6. Remove from the oven and wait for it to cool.
