Spicy Vegan Tomato Soup

Spicy style tomato soup that is very easy and quick to prepare - can also be used as a basic sauce for pasta, lasagna and stews (it is recommended to prepare a large quantity and freeze)

Olive oil, 1/4 cup
extra virgin
Garlic, 3-4 cloves
Basil, 1 bunch
leaves only
Tomato puree, 700 g
smooth tomato sauce
Peeled whole tomatoes, 465 g
tin can with the liquid
Water, 1½ cups
or vegetable stock
Harissa, 1/2 teaspoon
hot pepper spread - optional
Sugar, 1/2 flat teaspoon
Salt, 1 flat teaspoon
to taste
Black pepper, 1/2 flat teaspoon
coarsely ground - to taste
Olive oil, 2 teaspoons
0.5 teaspoon to sprinkle over each dish


1. Add the olive oil, garlic and basil to a small pot, fry over medium heat without browning for 2-3 minutes.
2. Add the rest of the ingredients, bring to a boil, lower to the lowest flame and cook with a lid for about 20 minutes.
3. Grind the soup with a rod blender.
4. Pour into individual bowls, drizzle with olive oil and serve with fresh and crispy bread.
