Ingredients
Onion, 2 medium units
Canola oil, 2 tablespoons
Eggplant, 1 medium unit
Red pepper, 1 medium unit
Green pepper, 1 medium unit
Yellow pepper, 1 medium unit
Orange pepper, 1 medium unit
Hot green pepper, 1 medium unit
Water, 1½ cups
Tomato, 2 medium units
Tomato paste, 2 tablespoons
Salt, 1/2 flat teaspoon
Sugar, 1/4 flat teaspoon
Preparation
1. Fry the onion in oil (which will remain transparent), add the eggplant cubes and continue to fry for another 7 minutes.
2. Add the peppers of all colors (including the hot pepper), and continue to fry for another 7 minutes.
3. Add the water, chopped tomatoes, tomato paste, salt and sugar, mix well and continue to cook for another 20 minutes.

Suitable as a side dish on rice or as a spread on a slice of bread.
