Red and White Bean in Tomato Sauce

Red and white bean vegan stew in tomato sauce and spices - a vegan stew that suitable to serve with white rice

Ingredients

White bean, 1½ cups
soaked in water overnight and strained
Red bean, 1½ cups
soaked in water overnight and strained
Olive oil, 3 tablespoons
for frying
Onion, 1 large unit
chopped
Garlic, 3 cloves
chopped
Tomato, 4 large units
grated
Tomato paste, 100 g
Paprika, 1 flat teaspoon
Cumin, 1 flat teaspoon
Ketchup, 1 teaspoon
Salt, 1/4 flat teaspoon
Black pepper, 1/4 flat teaspoon
coarsely ground
Spicy chili sauce, 1 teaspoon
to taste
Orange lentil, 1/2 cup
Boiling water, as needed

Preparation

1. Fry the onion and garlic in the olive oil in a large pan for about a 15 minutes until they soften.
2. Add all the ingredients, mix lightly and cover with 1 L of boiling water.
3. When it boils, lower the heat, cover and cook for about 1 hour (stirring occasionally).
4. Add another 1 L of boiling water, cover and continue to cook for about 1 hour until the bean soften.
5. Serve hot and enjoy!
