Ingredients
Eggplant, 2-3 medium units
Olive oil, 5 tablespoons
Sea salt, 1 flat teaspoon
Dried thyme, 1 flat tablespoon
Preparation
1. Cut the eggplants into slices about 2 cm (0.5 inch) thick, meanwhile line the oven trays and grease them with 1 tablespoon of olive oil each (2 tablespoons in total).
2. Arrange the eggplant slices in the trays, grease each slice with a little olive oil (3 tablespoons in total) and sprinkle with a little sea salt and dried thyme.
3.Bake in the oven at 390°F (200°C) turbo for about 45 minutes until lightly browned and allow to cool slightly.
4. Serve hot or snack straight from the tray.
