Baked Vegan Orange Lentil Latkes

Vegan orange lentil latkes for children with potatoes, oats and spices that you can bake or fry them

Ingredients

Orange lentil, 1½ cups
washed and strained
Potato, 2 small units
peeled and cut into cubes
Onion, 1 medium unit
chopped
Olive oil, 2 tablespoons
extra virgin - for frying onion
Oatmeal, 2 tablespoons
instant oats
Chickpea flour, 2 flat tablespoons
Bread crumbs, 1 tablespoon
Dried parsley, 1 flat tablespoon
Sea salt, 1/4 flat teaspoon
Black pepper, 1/4 flat teaspoon
coarsely ground
Cumin, 1/4 flat teaspoon
Turmeric, 1/4 flat teaspoon
Sweet paprika, 1/4 flat teaspoon
Baharat, 1/4 flat teaspoon
Dried coriander, 1 teaspoon
Olive oil, 2 tablespoons
for greasing the baking paper

Preparation

1. Cook the orange lentils in a pot with plenty of water for about 15 minutes until softened, strain and transfer to a bowl.
2. Cook the potatoes in a pot with plenty of water for about 15 minutes until softened, strain, mash and transfer to the bowl with the lentils.
3. Fry the onion in the olive oil until golden for about 5 minutes and add to the bowl.
4. Add the oatmeal, chickpea flour, bread crumbs and spices to the bowl. Mix everything together manually with a spoon.
5. Grease baking paper in a pan, form the latkes with wet hands and arrange them on the baking paper.
6. Bake at 356°F (180°C) turbo for about 20 minutes until golden (depending on the type of oven you have).
7. Remove from the oven, wait for it to cool and serve delicious and nutritious orange lentil latkes that suitable also for children.

The spices in the recipe are according to personal taste. The latkes can be fried in a pan with a little olive oil until golden on both sides.
