Ingredients
Tomato juice, 1 L
Boiling water, 1½ L
Celery, 1 whole branch
Parsley, 2 whole branches
Mashed tomatoes, 250 g
Ketchup, 1 tablespoon
Spicy chili sauce, 1 teaspoon
White pepper, 1/4 flat teaspoon
Vegetable soup powder, 1 flat teaspoon
Whole brown rice noodle, 225 g
Preparation
1. In a pot, boil the tomato juice and water.
2. Add the rest of the ingredients (except of the rice noodles), bring to a boil and cook for about 10 minutes.
3. In a separate pot, cook the rice noodles according to the manufacturer's instructions.
4. Pour a portion of soup into a serving dish, and add a handful of cooked rice noodles. Eat hot and enjoy.
