Brown Green Persian Rice with Dried Apricots

Brown rice with healthy and delicious herbs and dried apricots that give a great twist

Ingredients

Brown Persian rice, 1½ cups
Canola oil, 2 tablespoons
Parsley, 1/2 cup
chopped
Dill, 1/2 cup
chopped
Coriander, 1/2 cup
chopped
Celery, 1/2 cup
chopped
Dried apricots, 1/2 cup
chopped
Salt, 1 flat teaspoon
to taste
Water, 3 cups

Preparation

1. It is recommended to soak the brown rice in a bowl with water for about two hours or overnight. If you soak the rice - strain it, heat the oil in a pot, add it, stir and mix until it is all coated in oil.
2. Add the herbs (2 cups of herbs total) and apricots.
3. Season with salt, stir, add the water, bring to a boil, lower the heat and cook until the water is absorbed and the rice is ready (about 30 minutes).
