Green Lentil Salad

Green lentil salad that is also suitable for vegans with garlic, zucchini and parsley that can be eaten hot or cold

Ingredients

Green Lentil, 2 cups
soaked overnight
Canola oil, 1/4 cup
Garlic, 4 cloves
chopped
Salt, 1/2 flat teaspoon
Black pepper, 1/4 flat teaspoon
Cumin, 1/4 flat teaspoon
Turmeric, 1/4 flat teaspoon
Water, 1 cup
Zucchini, 2 medium units
Parsley, 1 bunch
chopped

Preparation

1. Fry the garlic and other spices in oil for 2 minutes, add the soaked green lentils and mix well.
2. Gradually add the water and continue to cook on a low heat for 20 minutes or until the water evaporates. If the lentils do not soften then add another 0.5 cup of water.
3. Continue to cook until the green lentils soften, add the zucchini and parsley and continue to cook for another 3 minutes.
