Ingredients
The Dough
Gluten-free flour, 1½ cups
Baking powder, 1 teaspoon
Salt, 1 flat teaspoon
Olive oil, 1/4 cup
Water, 1/2 cup
The Stuffing
Cauliflower, 1/2 unit
Tofu, 300 g
Garlic, 4 cloves
Olive oil, 4 tablespoon
Salt, 1 flat teaspoon
Black pepper, 1/2 flat teaspoon
For Greasing The Baking Pan
Canola oil spray, 6 servings
Preparation
1. Cook the cauliflower in boiling water for about 20-30 minutes.
2. Mix the dough ingredients and when the dough is formed knead it until it is uniform.
3. Press the dough into a greased pie pan.
4. Transfer the cooked cauliflower to a food processor, add the rest of the stuffing ingredients and process until a uniform mixture is obtained.
5. Spread the filling on the dough.
6. Bake in the oven at 356°F (180°C) for about 45 minutes.
