Vegan Vietnamese Spring Roll

The Rice Paper
Rice paper for filling, 30 units
Vegetable Filling
Cucumber, 2 medium units
with peel, cut into strips
Carrot, 2 medium units
without peel, cut into strips and half cooked
Coriander, 1/2 bunch
separated into leaves
Avocado, 3 medium units
peeled, sliced into strips
The Sauce
Soy sauce, 4 tablespoons
low sodium
Mirin, 2 tablespoons
or sweet chili sauce
Ginger root, 1 teaspoon
finely chopped
Sesame seeds, 1 teaspoon


1. Cut all the vegetables.
2. Boil water in a small pot, put the carrot strips in it and soak for 2-3 minutes until softened (the half cooking time depend on the thickness of the carrots - it is important not to boil too much). When the carrots are ready, take them out to a bowl of water with ice to stop cooking.
3. Prepare the spring rolls: Put the rice papers in a large bowl of water two units each time (put them in the water one after the other so that they do not stick).
4. After about a minute the rice papers soften. Take out one, in the center put the vegetable filling and roll into a tight cigar shape.
5. Prepare the sauce: Mix all the sauce ingredients in a small bowl and serve with the rolls. Now you can dip a perfect Vietnamese vegan roll in the sauce and enjoy!

Shiitake mushrooms or green onions can also be added to the spring roll filling. Strips chicken breast or sirloin strips can also be added.
