1. Cut all the vegetables.
2. Boil water in a small pot, put the carrot strips in it and soak for 2-3 minutes until softened (the half cooking time depend on the thickness of the carrots - it is important not to boil too much). When the carrots are ready, take them out to a bowl of water with ice to stop cooking.
3. Prepare the spring rolls: Put the rice papers in a large bowl of water two units each time (put them in the water one after the other so that they do not stick).
4. After about a minute the rice papers soften. Take out one, in the center put the vegetable filling and roll into a tight cigar shape.
5. Prepare the sauce: Mix all the sauce ingredients in a small bowl and serve with the rolls. Now you can dip a perfect Vietnamese vegan roll in the sauce and enjoy!
