Baked Potatoes Stuffed with Mushrooms

Real vegan delicacy of whole potatoes in the oven filled with fried mushrooms and onion - very suitable for a family dinner

Ingredients

Potato, 8 large units
Olive oil, 1 tablespoon
Salt, 1/4 flat teaspoon
Onion, 1 large unit
chopped
Canola oil, 2 tablespoons
for frying
Mushrooms, 200 g
fresh (also possible canned)
Salt, 1/4 flat teaspoon
Black pepper, 1/4 flat teaspoon
Cumin, 1/4 flat teaspoon
Parsley, 1/2 cup
chopped

Preparation

1. Wash the potatoes well, remove damaged parts, wipe and spread them with olive oil, sprinkle with salt and put in the oven at 390°F (200°C) for about 1 hour or until they are browned and softened.
2. Meanwhile, fry the onion in oil until browned, add the mushrooms, continue to fry and mix with the spices. Add the parsley, mix, remove from the heat and cool.
3. When the potatoes are ready, slightly cool them, make an X-shaped cut, open the cut and fill with mushrooms.
4. Arrange the stuffed potatoes on a baking sheet before serving, spray over a little oil, put in the oven at 356°F (180°C) for about 5 minutes and arrange on a serving dish and decorate to your liking.
