Celery, 1 small head
Zucchini, 2 medium units
Cabbage, 1/2 small unit
Broccoli, 1 medium unit
Onion, 1 large unit
Garlic, 3 large cloves
Parsley, 1/2 bunch
Frozen garden pea, 1 cup
Canola oil, 1/4 cup
Water, up to the height of the vegetables in the pot
Salt, 1/2 flat teaspoon
Black pepper, 1/4 flat teaspoon
1. Wash all the vegetables well and cut into cubes.
2. In a large pot heat the oil, add all the vegetables and fry for a few minutes.
3. Add the water and spices, mix, cover, bring to a boil, lower the heat and cook for about 25 minutes or until the vegetables soften.
4. Grind in a blender or leave as is (depending on what you like). The result is a delicious, nutritious, easy and vegan green vegetable soup, especially for a rainy winter day.
