Baked Eggplant Slices

Baked and juicy eggplant with a great spicy-sour sauce of lemon, oregano and harissa - a must have salad on your dining table

The eggplants
Baladi eggplant, 2 small units
not the long type
The sauce before baking
Thin pink salt from the Himalayas, 1/8 teaspoon
Olive oil, 2 tablespoons
Water, 3 tablespoons
For oiling the baking pan
Olive oil, 1 tablespoon
The spicy sauce after baking
Lemon juice, 1 unit
freshly squeezed, to taste
Dried oregano, 1/2 flat teaspoon
Thin pink salt from the Himalayas, 1/8 teaspoon
Spicy harissa, 1 teaspoon


1. Preheat the oven to 400°F (200°C) in turbo plan + top and bottom heat.
2. Cut the eggplants to half slices and place in a large bowl.
3. Prepare the sauce: mix the salt with the olive oil and 2 tablespoons of water, and whisk using a fork. Add the third tablespoon of water and mix again.
4. Pour the sauce immediately over the eggplants (make sure all the slices are coated in the sauce), and place the slices in a baking pan lined with oiled baking paper (one layer).
5. Pour over the sauce left in the bowl, bake in the hot oven until golden (about 15 minutes, but it varies depending on the oven you have, so you should check while baking of course) and turn the other side for a short baking.
6. Allow the eggplants to cool and transfer to a serving bowl.
7. Mix the ingredients of the spicy sauce and pour over the baked eggplant.
8. Store in the refrigerator until served (preferably overnight to absorb flavors).
