Eggplant, 1 large unit

Canola oil, 2 tablespoons
Peeled pine nuts, 1/4 cup
Walnuts, 1/4 cup
Parsley, 2 tablespoons
Salt, 1/4 flat teaspoon
Black pepper, 1/4 flat teaspoon
Lemon juice, 2 tablespoons
1. Cut the eggplant into slices, sprinkle with salt and set aside for about half an hour.
2. Dry, arrange on baking paper in a baking pan, spray with oil and bake at 400°F (200°C) for about half an hour or until browned.
3. Fry the pine nuts and walnuts in oil a lightly frying, add the parsley, salt, black pepper and lemon juice, and mix.
4. Arrange the eggplants on a serving dish and sprinkle over the pine nuts and walnuts mixture.
