Tomato Soup with Bean Noodles

Wintery tomato soup, delicious and easy to prepare with vegetable bouillon and chives

Ingredients

Tomato, 1 kg
large and fleshy
Olive oil, 4 tablespoons
for frying and steaming
Red onion, 1 medium unit
chopped
Garlic, 1 head
chopped
Carrot, 1 medium unit
finely chopped
Chives, 1 handful
chopped
Vegetable bouillon, 1½ L
Bean noodles, 100 g

Preparation

1. First of all, prepare the tomatoes for peeling: cover them with boiling water for a few minutes and then the peel falls off them very easily. Cut them into large cubes and set aside.
2. In a large pot, heat the olive oil a little, add the onion, garlic, carrot and chives, lightly fry and then cover the pot for further frying until the onion is translucent.
3. Add the pre-prepared tomatoes to the pot, and cover with vegetable bouillon until 1 cm above the vegetables.
4. Let the soup boil over low heat for about an hour. Then turn off the heat and transfer the mixture to a blender. Make the soup thick and smooth.
5. Bring the soup to another boil over low heat, meanwhile cook the bean noodles according to the manufacturer's instructions, and add the noodles to the soup only while serving.
6. On top you can sprinkle some chopped chives and serve.

The vegetable bouillon can also be made from soup powder. The nutritional value does not include the vegetable bouillon. The preparation method also includes frying-steaming. You can add spices to taste.
