Orange Lentil Soup

Delicious winter soup with orange lentils and vegetables - easy to prepare, nourishes and warms the throat and the heart

Ingredients

Carrot, 2 medium units
without peel
Potato, 2 small units
Onion, 1 medium unit
white or purple
Sweet potato, 2 small units
Olive oil, 4 tablespoons
for frying vegetables
Boiling water, 7 cups
as needed
Orange lentils, 1 cup
Parsley, 1 handful
chopped
Salt, 1 flat teaspoon
Black pepper, 1/4 flat teaspoon
Turmeric, 1/4 flat teaspoon
Cumin, 1/4 flat teaspoon

Preparation

1. Cut the carrots, potatoes, onions and sweet potatoes into small cubes and fry them in oil for a few minutes.
2. Add the boiling water and cook the vegetables for about 15 minutes.
3. Add the orange lentils, chopped parsley and spices, mix and cook covered for about 15 minutes until the vegetables and lentils are soft.
4. When the soup cools down a bit, grind it in a rod blender (you can set aside some of the chopped vegetables that are not ground and add to the soup after grinding).
5. Serve with soup croutons.
