Black Lentil Salad with Bulgur and Sweet Potato

Homemade black lentil salad, delicious and easy to prepare with the addition of bulgur, baked sweet potatoes, mint, cranberries, nuts and seeds - a delicious and easily nutritious dinner!

Black lentils, 1 cup
Thick dry bulgur, 1/2 cup
Mint, 1 handful
Red onion, 1 medium unit
sliced thin
Sweet potato, 1 medium unit
cut into cubes
Cranberries, 1 handful
Walnuts, 1 handful
Sunflower seeds, 1 handful
peeled and roasted
Olive oil, 3 tablespoons
Salt, 3/4 flat teaspoon
lemon juice, 1 unit
freshly squeezed


1. Early preparation: Cook the black lentils for about 10 minutes (half cooking), soak the bulgur in boiling water for about half an hour and bake the sweet potato cubes in the oven for about 25 minutes at 400°F (200°C) until lightly golden (be careful not to burn it, it is best to bake on a high heat so that the sweet potatoes cubes will be as crispy as possible).
2. Mix all the ingredients together in a bowl, season in the olive oil, lemon juice and salt to taste and serve (you can also season with a little black pepper).
