Homemade Matbucha Salad (Matbukha)

Homemade matbukha from the Moroccan kitchen with cooked tomatoes in a delicate taste (depending on who) of hot pepper

Ingredients

Canola oil, 2 tablespoons
Tomato, 10 medium units
ripe, peeled and chopped
Tomato paste, 3 tablespoons
optional (according to personal preference)
Hot green pepper, 2 medium units
finely chopped
Garlic, 10 cloves
sliced
Paprika, 1 flat tablespoon
sweet
Cumin, 1/2 flat teaspoon
Sugar, 1 flat teaspoon
Salt, 1 flat teaspoon

Preparation

1. Chop the tomatoes and put in a pot (for those who want without peel - make an "X" with a knife in the tomatoes, put them in boiling water for a minute and then peel).
2. Add the tomato paste, hot pepper, garlic and all the spices.
3. Bring to a boil and cook for about 45 minutes on low heat. The result is a simply perfect homemade matbukha. Keep refrigerated.

Total time: ±1 hour

Water should be added only if the tomatoes are not ripe enough - if they are ripe then not necessary. The level of spiciness is according to personal taste.
