Buckwheat, Bulgur and Black Lentil Mujadara

Delicious and healthy vegan mujadara combined with green buckwheat, coarse dry bulgur and black lentils with the addition of fried onions - very suitable for vegans, vegetarians and those who want to maintain a healthy diet

Black lentil, 1/2 cup
Dry bulgur, 1/2 cup
Buckwheat, 1/2 cup
Onion, 1 large unit
Canola oil, 2 tablespoons
Salt, 1/2 flat teaspoon
Black pepper, 1/2 flat teaspoon
Cumin, 1/4 flat teaspoon
Water, as needed


1. Soak the black lentils for about 2 hours, the bulgur for about 1 hour and the buckwheat for about 1 hour as well.
2. In a pot with about 3 cups of boiling water cook the black lentils for about 3-5 minutes, add the bulgur and buckwheat and cook for another 2 minutes.
3. Strain the cooking water and rinse the lentils, bulgur and buckwheat a little with cold water.
4. In a non-stick pan, fry the onion in the hot oil until golden, add the lentil mixture with the bulgur and buckwheat, add the spices to taste and fry for another minute.

The preparation method also includes soaking and frying. The spices in the recipe are according to personal taste.
