Raw Food "Cheese" Chocolate Chip Cake

Raw food vegan cake with "cheese" from cashews and chocolate chip from cocoa butter and cocoa paste

Ingredients

The Bottom
Pecan, 1 cup
natural
Cocoa powder, 3 flat tablespoons
organic
Medjool date, 6 units
Maple syrup, 1 tablespoon
Thin pink salt from the Himalayas, 1 pinch
"The Cheese"
Cashew, 6 cups
natural
Almond milk, 1 cup
Maple syrup, 1 cup
Coconut oil, 1 cup
Vanilla extract, 2 tablespoons
The Chocolate Mousse
Pecan, 1 cup
natural
Cocoa powder, 3 flat tablespoons
organic
Medjool date, 6 units
Maple syrup, 1 tablespoon
Thin pink salt from the Himalayas, 1 pinch
Almond milk, 1/2 cup
The Chocolate Chip
Pure cocoa butter, 120 g
Cocoa paste, 50 g
raw
Stevia vanilla, to taste (I put 6 drops)
or pure maple syrup

Preparation

The Bottom Preparation:
1. Process all the bottom ingredients in a food processor, until the mixture begins to become sticky.
2. Clamp to the cake pan.
3. Leave at room temperature.
The "Cheese" Preparation:
1. Put the cashews and almond milk in a blender, and process well until a cheesy texture is obtained.
2. Add the rest of the ingredients and continue to process until a uniform mixture is obtained.
3. Pour half of the mixture over the bottom and freeze for two hours.
The Chocolate Mousse Layer Preparation:
1. Process all the mousse ingredients in a food processor.
2. When the "cheese layer" we put in the freezer has hardened, remove from the freezer and spread the chocolate mousse over it.
3. Put in the freezer for another two hours.
4. When the chocolate mousse layer has hardened, remove from the freezer, and spread over the other half of the cheese mixture.
The Chocolate Chip Preparation:
1. Melt the cocoa butter together with the cocoa paste in a bain-marie over a very low heat.
2. When completely melted, remove from the heat, add the stevia and mix well.
3. Pour into silicone molds of chocolate or even muffin tins, and freeze until hard.
4. Remove the chocolate from the silicone molds directly to the food processor, and grind it in pulses until coarse chocolate fragments are obtained.
5. Sprinkle the chocolate chips over the cake.

Equipment: food processor, bain-marie.

The preparation method also includes grinding. The nutritional value does not include the Himalayan salt, almond milk and stevia vanilla.
