Cooked Potatoes with Fried Seeds

Cooked potatoes with pine nuts, sunflower seeds, pumpkin seeds and a selection of spices - a great vegan addition for a meal with lots of flavors that blend wonderfully together

Ingredients

The Potatoes
Potato, 1 kg
peeled and cut into eighths
Water, 5 cups
Salt, 1 flat tablespoon
The Nuts and Spices
Canola oil, 1/4 cup
for frying
Pine nuts, 2 tablespoons
Peeled sunflower seeds, 2 tablespoons
Peeled pumpkin seeds, 2 tablespoons
Garlic, 1 teaspoon
crushed - to taste
Salt, 1/4 flat teaspoon
Black pepper, 1/4 flat teaspoon
Turmeric, 1/4 flat teaspoon
Cumin, 1/4 flat teaspoon
Dried parsley, 1 flat tablespoon
to taste
Four seasons pepper, 1 teaspoon

Preparation

1. Cook the potatoes with the water and salt for about 20 minutes or until the potatoes are soft (but not too soft). Strain out of the water and cool.
2. Fry all the spices and nuts in oil, add the potatoes and mix gently so that all the potatoes absorb the spices.
3. Transfer to a serving dish.
