Easy Vegan Split Pea Soup

Ingredients

Onion, 1 large unit
chopped
Canola oil, 1 tablespoon
Garlic, 2-3 cloves
large and cut
Potato, 1 small unit
optional - peeled and cut
Split peas, 2 cups
soaked for 1 hour in lukewarm water
Water, 4 cups
Coriander, 1 handful
chopped
Parsley, 1 tablespoon
chopped
Chicken flavored soup powder, 1½ flat tablespoons
to taste (vegan)
Cumin, 1 pinch
Black pepper, 1 pinch

Preparation

1. In a large pot heat the oil, chop the onion and fry a little until it becomes translucent, add the garlic slices, and after about 1 minute add the diced potatoes and continue to fry a little.
2. Add the soaked split peas after straining, mix well, add water until covered and bring to a boil.
3. Add the chopped leaves with the spices, mix and lower the heat. Cook until the peas begin to dissolve and disintegrate. Do not forget to check in between and add more water if needed.
4. Grind a little using a rod blender and serve hot. Note: The soup comes out very thick. Can always add more liquids until your desirable texture is obtained.
