Preparation
1. Preheat the oven to a temperature of 390°F (200°C).
2. Grate the potatoes on a coarse grater (can also use a food processor).
3. Squeeze out all the liquids well, add the salt, garlic powder and olive oil to taste and mix well.
4. Take a little bit from the mixture with your hand, tighten between the palms to form a kind of pancake shape.
5. Place the latkes on a baking tray lined with baking paper, spray a little with oil spray (optional) and bake in a preheated oven for about 15 minutes.
6. Gently turn over the latkes and bake for another 15 minutes until golden.
7. Cool a little and you get perfect and easy vegan potato latkes!

Tip
You can also add one grated onion to the mixture (do not forget to squeeze liquids). You can replace the garlic powder with black pepper or any other spice you like.
