Cooked Fennel

Whole cooked fennel with fried onions and spices

Ingredients

Fennel, 4 large or 8 small heads
Onion, 1 medium unit
cut into thin strips
Canola oil, 3 tablespoons
for frying
Hot water, 1 cup
Vegan chicken soup powder, 1 flat tablespoon
optional
Salt, 1/4 flat teaspoon
Black pepper, 1/2 flat teaspoon
coarsely ground
Turmeric, 1/4 flat teaspoon
Ground cumin, 1/4 flat teaspoon
Garlic, 1 teaspoon
crushed

Preparation

1. Clean the fennel and wash well (if using large heads then cut them in half).
2. Fry the onion in oil for a few minutes and arrange the fennel on top.
3. Mix the spices and garlic with the hot water, pour over the fennel, bring to a boil, lower the heat and cook for about 15 minutes or until softened (be careful - do not soften too much. If necessary, add a little water).

Tip
You can also add celery + sprinkle with parsley before serving.

The spices in the recipe are according to personal taste. The preparation method also includes frying. It is not necessary to use soup powder - in this case add a little more salt.
