Penne Pasta with Spinach and Mung Bean

Ingredients

Penne pasta, 3 cups
you can also use whole wheat pasta
Onion, 1/2 medium unit
cut into cubes
Olive oil, 2 tablespoons
Garlic, 5 cloves
sliced
Celery, 2 stalks
with the leaves, chopped
Spinach, 200 g
fresh, washed and chopped
Sprouted mung beans, 2 cups
Parsley, 1 handful
finely chopped
Salt, 1/2 flat teaspoon
Black pepper, a pinch
Ground nutmeg, 1/2 teaspoon

Preparation

1. Heat a little olive oil in a large pot, add the onion and garlic and cover.
2. After a few minutes, add the celery and spinach for steaming.
3. Add the mung beans and parsley leaves and season to taste.
4. From the moment we added the sprouted beans, everything will be ready in 10-15 minutes of cooking.
5. In a separate pot, heat water with oil and a little salt, add the pasta for cooking of 11 minutes (according to the cooking instructions).
6. Strain the pasta, add to the sauce and serve immediately.
