Mujaddara

Homemade mujaddara rice with turmeric, green lentils and garlic touches - a wonderful addition to the meal

Ingredients

Green lentils, 1 cup
Basmati rice, 2 cups
Salt, 1½ flat teaspoons
Garlic, 7 cloves
crushed
Canola oil, 10 tablespoons
Cumin, 1 flat teaspoon
Turmeric, 1½ flat teaspoons
Salt, 1/2 flat teaspoon
Water, as needed

Preparation

1. Select and wash the lentils, soak them for about an hour in water to soften them.
2. Boil 5 cups of water in a deep pot, add the lentils and cook for about 20 minutes.
3. Add a teaspoon and a half of salt and the rice, and continue to cook for another 10 minutes (until the rice is half cooked).
4. Remove from the pot, strain from the water and put in a bowl (you can also wash under tap water if you want less salty rice, but it is not mandatory).
5. Lightly fry the crushed garlic in oil (in the same pot) and add the turmeric and cumin.
6. Transfer the rice with the lentils to the pot with the garlic and spices, and mix well.
7. Mix 3/4 cup boiling water with half a teaspoon of salt, pour over the rice, cover the pot and cook on low heat for about 20-30 minutes until the rice is ready - a wonderful homemade mujaddara is obtained!

Tip
Those who like can add fried onions of course - I made a slightly different version with more garlic, but it is definitely possible and very tasty to add fried onions.

Total time: 1-2 hours

The spices in the recipe are according to personal taste. The amount of oil can be reduced. The preparation method also includes soaking and frying.
