Ingredients

Frying the eggplants
Eggplant, 2 medium units
Canola oil, 1/2 cup
Salt, 1 flat tablespoon
Tomatoes and other ingredients
Tomato, 2 medium units
finely chopped
Onion, 1 large unit
chopped
Garlic, 4 cloves
chopped
Canola oil, 2-3 tablespoons
for frying
Tomato concentrate, 2-3 tablespoons
Salt, 1½ flat teaspoons
Black pepper, 1 flat teaspoon
Green zhug, 1-2 teaspoons
or hot green pepper
Water, 1¼ cups
as needed

Preparation

1. Cut the eggplants laterally to a thickness of 1 cm, sprinkle with salt and wait about an hour for the eggplants to "sweat".
2. Wash the eggplants under tap water and squeeze.
3. Fry the eggplant in oil and set aside.
4. Chop the onion and fry in oil, add the garlic and fry a little, add also the chopped tomatoes, tomato concentrate, water, fried eggplant, salt, black pepper and zhug.
5. Continue to cook for about 15 minutes until the water is reduced and then turn off the heat.
