White Beans in Tomato Sauce

White bean stew in a red tomato sauce that can be eaten as a soup or as a side dish with white rice

Ingredients

White beans, 500 g
Baking powder, 10 g
Canola oil, 3 tablespoons
for frying onions
Onion, 1 large unit
cut into small cubes
Garlic, 4 cloves
crushed
Tomato, 5 medium units
ripe and cut into cubes
Salt, 2 flat teaspoons
Black pepper, 1 flat teaspoon
coarsely ground
Cumin, 1 flat teaspoon
Paprika, 4 heaping teaspoons
red and sweet
Tomato paste, 200 g
Sugar, 1 flat teaspoon
Water, 5-6 cups

Preparation

1. Soak the white beans in water for at least 8 hours with baking powder (shortens the beans’ cooking time).
2. After soaking, wash the beans well and put in a pot with water. Boil once or twice and wash again so that all the white foam comes out.
3. Heat the oil in a pot and fry the onion until translucent. Add the garlic cloves and tomatoes, and continue to mix well for a few minutes.
4. Add the washed white beans after boiling, salt, black pepper, cumin, paprika, tomato paste and sugar.
5. Mix everything well and add 5-6 cups of water.
6. Bring to a boil, lower to a low heat and cook for about 2 hours. Of course, check flavors and if seasoning needs to be added.
