I am a mother of 4 children. A few years ago, celiac disease was discovered in 3 of my children (later celiac disease was discovered in other family members) and at first the feeling was that there was nothing to eat, and what was there was not tasty.
I signed up for the Celiac Association and received a lot of phone support. I purchased a baking booklet through them and the experiments began. At first everyone said it was impossible to make gluten-free dough that could be kneaded, but then I discovered in the book a recipe for pitas with kneadable dough and I thought it was possible to keep trying other things as well. Over the years I have collected, and still collect, baking tips and since I am a "chronic" experimenter I check everything, try and make changes. According to the reactions of the celiac patients and those who do not, the results are delicious and improving.
I wrote gluten-free recipes in a local newspaper, and a few months ago I started a blog that is all about gluten-free baking. The pinnacle of achievement for me, that my eldest son said, "It's like you used to do". I do not have a favorite kitchen, baking and cooking what tastes good. I really like converting regular recipes from my family and old numbers.
