Ingredients
The Egg Substitute
Whole wheat flour, 6 flat tablespoons
Baking powder, 2 teaspoons
Water, 6 tablespoons
Olive oil, 5 tablespoons
The Latkes
Potato, 6 medium units
Whole wheat flour, 6 flat tablespoons
Salt, 3 flat teaspoons
Grape seed oil, 1/2 cup
Preparation
1. Mix the egg substitute ingredients and set aside.
2. Grate the potatoes on a grater or food processor, squeeze well from the liquids and transfer to a bowl.
3. Add the flour, salt and egg substitute we prepared to the grated potatoes, and mix well with your hands.
4. Heat the oil in a pan that will cover the entire bottom and a little more (each time add a little as needed).
5. Make Latkes and fry on both sides until golden. Great vegan potato latkes are obtained.
