Vegan Banana Muffins with Chocolate Chip

Ingredients

Banana, 7 medium units
soft
Brown sugar, 1/3 cup
Apple sauce without added sugar, 4 heaping tablespoons
Soy milk, 1/4 cup
or any vegetable milk/water
Coconut oil, 2 tablespoons
cold pressed/organic
White flour, 1 cup
Whole spelt flour, 1 cup
Salt, 1 pinch
Dark chocolate chip, 1/2 cup
Baking powder, 1 teaspoon
Baking soda, 1 flat teaspoon
Coconut oil, 2 tablespoons
to grease the molds
Dark chocolate chip, 1/4 cup
spread over the muffins

Preparation

1. Mash the bananas in a bowl and add the brown sugar, apple sauce, soy milk and coconut oil.
2. Mix well and add the white flour, spelt flour, salt and chocolate chip, and continue to mix well.
3. Preheat the oven to a temperature of 356°F (180°C) turbo.
4. Add the baking powder and baking soda to the bowl, mix to combine and pour into greased muffin tins up to 0.75 of their height.
5. Sprinkle 3-4 chocolate chips over each muffin.
6. Bake the vegan muffins for about 30 minutes or until browned, wait for it to cool completely, take out and enjoy delicious vegan banana muffins!
