Ingredients

Cashew, 1 cup
soaked for at least 2 hours
Water, 1/4 cup
Lemon juice, 1 tablespoon
Thin salt from the Himalayas, 2 teaspoons
Black pepper, 1/2 flat teaspoon
Water, 1 cup
Agar Agar powder, 1 tablespoon
vegetable gelatin
Green olives, 20 units
chopped

Preparation

1. Grind in a blender the cashews with the 1/4 cup of water, lemon juice and spices.
2. Put 1 cup of water in a pot with the agar agar powder, and bring to boil while stirring.
3. Pour the water with the agar agar into the blender and mix until a smooth mixture is obtained.
4. Transfer to a bowl and mix 20 chopped olives into the vegan cheese or fasten them to the bottom of a silicone pan (alternatively you can add zaatar, nigella or some hot chili spice, etc). Another option is to transfer half of the vegan cheese to a pan, on top place the olives (as a middle layer) and on top of that another layer of vegan cheese. Refrigerate for 12 hours (to set) and you will get a great vegan cashew cheese.
5. Bon appetite (:
